The peak experience of summer grilling is just around the corner, longer nights with pleasant outdoor temperatures and beautiful sunsets. If you want to elevate your grilling experiences this summer, I’d recommend you try out this Peak Blend seasoning by Man Mountain Co. Personally, I’ve tried it many ways and all turned out exceptionally, from chicken, pork, beef and wild game. A standout recipe that I tried, was using the Peak Blend seasoning in a brine for chicken. Using a liberal amount of Peak Blend and sea salt, I threw large chicken breasts and drumsticks into a sealable container and filled with water until the chicken was completely covered. After 24 hours of marinating in the fridge, I removed the chicken from the brine and dried the individual pieces off. I then used a brush to apply some extra virgin olive and applied another coat of Peak Blend. Pre-warming to 225°F on the pellet grill, I inserted temperature probes into the breasts, and spaced the chicken pieces on the grill. Once to an internal temperature of 165°f, I allowed the chicken to rest for 5-10 minutes before serving with a garden salad paired with a thick slice of baguette smeared in garlic butter and complimented with a craft red ale. The chicken was juicy, it had a beautiful colour to the outside and the the flavour was well pronounced throughout - even the thickest section of meat.
